Potato Skin Bites

Recipe Name: Potato Skin BItes
Servers approximately: 4-5 people as appetizer
Chef Ginzu Difficulty Level (1 blade = easy; 5 blades = very difficult): 3 blades

  • 2 Russett or Idaho potatoes
  • 6 slices bacon
  • 1 package cream cheese
  • 1 package sour cream
  • 3-4 scallions sliced thin
  • 1 package of Shredded Mexican cheese (might need a little more depending on how
  • Heavy handed you are with the cheese)
  • Vegetable oil
  • Salt and Pepper for seasoning


  1. Slice the potatoes about 1/8 inch thick. You do not want them too thick but don’t want them potato chip thin eitheripad pics 126
  2. Sprinkle one side of slices with salt and pepper
  3. Pan fry (can deep fry as well) each slice until nice and brown
  4. As the slices are ready, place on paper towels to help drain off excess oil
  5. Place each slice flat on a cookie sheet (I like to put mine on parchment paper so they don’t stick to the pan and I don’t need to add any oil or spray to the pan.
  6. Spread a thin layer of cream cheese on each individual potato slice
  7. Cover each slice with cheeseipad pics 127 (Small)
  8. Add scallion to each slice

  10. Broil until cheese is melted
  11. Remove and dollop each slice with sour cream or creme fresh
