Italian Stuffed Calamari

Chef Ginzu Difficulty Level (1 blade = easy; 5 blades = very difficult): 2 blade

Ingredients:

  •  3  lbs squid

Stuffing:

  •  3 cups of hand grated bread crumbs
  • 4 eggs
  • Garlic powder
  • ¼ cup fresh chopped parsley
  • 4 oz olive oil
  • salt
  • pepper
  • ¾ cup grated parmesan cheese

Topping:

  • 1 can whole peeled/plum tomatoes
  • 4 cloves garlic chopped
  • Oregano
  • Grated Parm cheese

Directions:

  1. Preheat oven to 350
  2. Clean squid, wash thoroughly, soak in water
  3. Mix bread crumbs, eggs, parsley, oil, salt, pepper, garlic and cheese
  4. Stuffing should be sticky.  If too wet, add more bread crumbs
  5. Stuff squid about 1/3 full and close end with a toothpick
  6. Do not over stuff because the eggs expand
  7. Arrange in a lasagna pan, cover with tomatoes
  8. Sprinkle with parsley, and chopped garlic
  9. Bake covered for 45 minutes
  10. Remove cover and bake another 15 min
